our take on the cottage roll, a Canadian classic traditionally made by curing boneless pork shoulder in brine and boiling it. It's been prepared this way for a century, so we thought it was time to reimagine the roll as a roast. We upped the Canuck with Canadian-raised pork coated in a maple-apple seasoning. As the roast crisps in your oven or air fryer, the rub caramelizes into a glossy, flavour-locking glaze while the meat stays tender and juicy. From humble cut to holiday hero, this just might be the greatest comeback of all time.
